The Beet Goes On

Craving a sweet, cool, refreshing, healthy vegetarian recipe or snack on these hot summer afternoons? Want a flavor-packed side dish that can curb that late afternoon snack monster? Check out this healthy vegetarian recipe that packs nutrients, is calorie-conscious, and contains healthy fats!

Why is this dish so healthy? Because it contains plenty of phytonutrients! These are non-nutritive chemical compounds in plants that have many benefits to the body.

Beets get theirs from their deep red-violet color, which have high antioxidant, anti inflammatory characteristics [1]. They have been also linked to controlling diabetes and improving blood pressure, with anti-cancer and wound-healing properties [2]. 

Tomatoes get theirs from their deep red color, which have been linked to improving vision/respiratory disorders and combating cardiovascular disease, some cancers, and DNA mutation [3]. 

So what does this mean? Not only is this dish a delicious, healthy vegetarian recipe that’s quick-to-make & packed with plenty of healthy fats, but you can fight disease?!?! GET YOUR SNACK ON!

Nutrient Dense Beet & Tomato Summer Salad

Servings

1 side dish (best when fresh)

Ingredients

  • 2 cupped palms of diced, cooked beets*

  • 2 cupped palms of whole cherry/grape tomatoes

  • ¼ cup Balsamic vinegar

  • 2-3 tbsp Feta cheese (to taste)

  • 2-3 tbsp crushed walnuts or 6-8 walnut halves (optional, remove for nut free version)

Instructions

  • Dice beets (see photo below for easiest way to do so!)

  • Half medium-sized or quarter large tomatoes

  • If walnuts are whole, crush them

  • Combine beets, tomatoes, walnuts, feta & add Balsamic

  • Mix & enjoy!
